There were pea shoots at Trader Joe's this afternoon, which means we had my favorite couscous salad for dinner. Usually we only make it out to Trader Joe's on the weekends and by the time we get there, all the pea shoots are gone and so is the sign. Alternate sprouts are nowhere near as delicious and no other grocery store around here seems to have pea shoots, sadly.
Other than obtaining the pea sprouts, it's incredibly quick and easy to make, especially if you toast your sliced almonds ahead of time.
couscous salad with dried apricots
1 cup dry couscous
2 tablespoons butter or olive oil
1 cup dried apricots, chopped
½ cup sliced almonds, toasted
4 ounces (1 package) pea shoots, chopped
½ cup balsamic vinaigrette
romano cheese, freshly grated
Combine couscous and butter or olive oil in a medium saucepan. Add 1 cup boiling water and let stand for five minutes.
Stir in vinaigrette, apricots, almonds and pea shoots and top with freshly grated cheese to taste. Serves 3-4.
